Quick and Easy! Maja Blanca or Coconut Pudding Recipe

We all know that Maja Blanca is all-time favorite Filipino kakanin. A soft tasting, delicate, sweet and creamy dessert that many craved every now and then.  It is also called Coconut Pudding.

Maja Blanca is mostly present and prepared on special occasions especially during holiday’s season.

And as the Christmas season approaches, let us share this quick and easy Maja Blanca (Coconut Pudding) kakanin recipe for you to prepare!

Maja Blanca Recipe:

2 cups of think coconut milk
¾ cup cup cream style corn
½ cup of cornstarch
½ cup of sugar (white)
3 tablespoon corn kernels

For Latik:

2 cups of think coconut milk
3 tablespoons sugar (white)

Steps and directions:

1. Boil cups of coconut milk. Constantly stir until oil begins to separate from the milk, do this for around 30 minutes. Skim and reserve oil in a bowl. Reduce heat to medium low then add 3 tablespoons sugar to remaining milk. Continue cooking and stir until milk becomes brown and crumbly, do this for at least 30 minutes. Remove latik from heat.

2. Heat remaining 2 cups coconut milk, add the cream-style corn, cornstarch, 1/2 cup sugar, and corn kernels in a saucepan in a medium heat. Keep on stirring until thickened, do this for around 5 minutes. Pour the mixture into a greased 8-inch mold or pie dish (you may use the coconut oil from earlier). Cool until Maja Blanca is set.

3. Cover mold with a plate and overturn Maja Blanca onto the plate. Slice and sprinkle it with latik.
